Tater Bites

Ever since Small Fox was able to feed himself he has been the only person allowed to get near his mouth with food. Unless it is Ice Cream or yogurt. Those are the ONLY two exceptions. So, I am always on the lookout for creative, fun, and healthy ideas for a toddler. I came across the blog So Very Blessed a while ago when I made her buffalo chicken quinoa bites {which are to die for}. I had also noticed her recipe for Twice Baked Potato Bites and thought to myself…”those would be really good with sweet potatoes, some cinnamon, and brown sugar.” What toddler could resist that combo, right?! On my weekly grocery list went sweet potatoes for this very recipe. Well, as I go to pull out the ingredients for tonight I realize I bought regular potatoes {I blame it on the lack of sleep from a sick Small Fox}.

UGH…well I decided to try a version of So Very Blessed’s Twice Baked Potato Bites…here it is:

INGREDIENTS

2 Russet Potatoes
1 Large Egg
1 TBS Gluten Free Flour {can be made with whole wheat as well}
1/4 Shredded Cheddar Cheese
3 TBS Plain Greek Yogurt
1/2 tsp Salt

Directions

1.) Pre-heat oven to 350 degrees.

2.) While the oven is pre-heating bake potatoes in microwave until they are mashable {<;;–that is totally a word}

3.) Mash the potatoes and add in all other ingreadients. Mix together with a fork. I did the fork method at first then got all down and dirty with my hands to make sure it was evenly mixed. You could use and electric mixer too.

4.) Grease a mini muffin tin and place a TBS full of taters into the tin. Press down slightly to flatten.

5.) Bake for 20 – 25 minutes or until golden brown.

These little tater bites were GREAT…even hubby approved. Small Fox had already had his dinner so he will do his taste test tomorrow. Hope you enjoy!

Fall Pumpkin Butter Newtons

While I was recently looking for healthy snack options for Small Fox I came upon this recipe on Weelicious. I love the idea of a homemade fig newton. However, I am not a huge fan of figs. So, I decided to modify the recipe a little and make more of a “fruit newton.” I figured I could just substitute some fruit preserves or jam for the figs and viola…a non-fig newton that makes everyone happy!! Well, I came across an fun little gem while I was shopping for these delicious treats at Safeway. Everyone I am sure has heard of Apple Butter…but what about Pumpkin Butter?!?! Grandma Hoerners’ All Natural Pumpkin Butter to be exact. I was secretly jumping for joy at this discovery. I could hardly wait to get home and bake these. So here is how it went down:

What You Will Need:

3 TBS Grandma Hoerners’ Pumpkin Butter {+ or -}
6 tablespoons unsalted butter, softened
1/2 cup sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups Gluten Free Flour {we recently went Gluten Free but you can substitute Whole Wheat}

How You Do It:

1. Preheat oven to 350.

2. In the bowl of a standing mixer, or with a hand mixer, cream together the butter and sugar for 2 minutes, or until smooth. Add the egg and vanilla and mix until incorporated.

3. Add the flour and mix until a dough forms.

4. Roll dough between two pieces of parchment paper into two 12 x 4 inch rectangles.

5. Spread the fig mixture on one half of each rectangle – spreading up the 12-inch side and leaving a 1/4-1/2 inch border.

6. Fold the dough over on top of itself and gently press the dough together at the edges.

7. Cut each log into 10 cookies and transfer to a silpat or parchment-lined baking sheet. {Ignore how Ugly they are}

8. Bake 15-20 minutes, or until golden.

Let me just say these are SOOOOOOOOOOO good. I had absolutely NO expectations, but they are delicious. The only problem I had was with the gluten free flour. The dough is a little more fragile and hard to fold over. I ended up spraying cooking spray on the spatula and I would recommend spraying it on the parchment paper, as well, before flipping.

It was the perfect fall snack on a summer day!!

Favorite Things {Workout Edition}

With fall slowly creeping around the corner you know what that means…winter is to follow. The dark mornings, snow, cold, and no more exercising outside…well limited outdoor activity. Nothing can subsitute a good outside run {for me}, so when I am feeling extra energetic I will bundle up the babe and head out rain, snow, or shine. However, for those days when I want to stay in the nice cozy walls of our home I have a few Go-To websites that have wonderful workouts.

1.) Tone it Up – Katrina and Karina are probably so cute they will make you sick. In three years they have built a HUGE online fitness community and been dubbed the “New Faces of Fitness” by Jane Fonda. They offer accountability through their website and TONS of free workouts, plus a monthly calendar to keep you on track. They also have a nutrition plan and DVD’s for purchase, but I seriously love these girls. Great workouts and if I turn out looking like them…AWESOME!

2.) Fit Fab Cities – Caitlin Murphy is the face behind this awesome site. She has GREAT fun, quick workouts that anyone can fit into their lifestyle. I know how busy life can be and will often grab on of these workouts when I am pressed for time. These are all printable and totally fun!

3.) Nike Training App – #1 thing it is FREE! I was so sad when I went from iPhone to Droid that I couldn’t get this app. I absolutely love it when I need a challenging workout. There are workouts from beginner to advanced and from toning to building muscle. Nike also adds bonus workouts from athletes as well…which again are free. The app has a countdown and cues you on all exercises.

4.) Mom’s Into Fitness – I credit Lindsay Brin with me getting my body back post baby. As anyone with a newborn knows it is exhausting and the closer you stay to home the better. She has some free workouts on her blog, but most of her stuff is for purchase. I used her prenatal DVDs for when I was knocked up and then her bootcamp DVDs post baby. She also has a workout portal where you can pay a monthly fee and have new workouts each month, which are all downloadable to your electronic device of choice. All the workouts are different. From HITT to yoga to circuit training, Lindsay mixes it up so your body is always challenged! Bonus: All the paricipants in the videos are moms!!!

Ombre Kissing Balls

Ombre Kissing Balls

Lately I have noticed the word “Ombre” everywhere!  It took me a while to figure out what exactly it was.  Then I realized it is the same color but different shades.  It is SO fun.  I had started these kissing balls awhile ago, but they hadn’t been finished.  I noticed that the floral embellishments that I had purchased had different shades of the same color, so I decided the last two kissing balls would be in the Ombre style.  Really I just wanted to get on this new trendy craft bandwagon:).  These are REALLY simple and, once again, cheap!  The total cost for these were $6!!  Here are all the deets on how to make some of your own:

  • Glue Gun {Free}
  • Foam Balls $1 for 4 {Dollar Tree}
  • Floral Embellishments $2.50 each – $5.00 {Michael’s Clearance} – They are in the scrapbooking section by Recollections
    Step One:
    Pick the middle shade and start gluing a row in the center.  I glued a row in the center, then one above and one below.  I continued gluing above and below until it looked like I had an even amount of uncovered foam left over on the top and bottom.
    Step Two:
    KEEP GLUING!  As you can probably tell this isn’t the Ombre style kissing ball…but hopefully it gives you at least the idea.  Just keep gluing…just keep gluing.  Don’t worry if you see foam peaking out.  You can always go back and insert flowers where you see gaps or if you want a more full look.
    And that’s it!!!  Sit back and admire.  I had a few straggling lollipop sticks so I decided to put my kissing balls on those so I could put them in one of my painted jars, but they would also look totally cute in a bowl as well!

WIN! A Cannon T3 DSLR

I am the first to admit I am lazy. Well I don’t know if it is so much lazy as it is pressed for time. The time it takes to take photos on my little point-and-shoot, load them onto my computer, edit them for a post, and then write the post takes WAY too long. Often the thought of doing all that just annoys me. Recently the Fox household got an iPad and I have been using that to take pictures, edit, etc. It works great, but the quality isn’t amazing. There is ONE thing that would change all of that. If I had one of those fancy shmancy DSLR cameras. They are the bees knees, but trying to persuade Mr. Fox that we NEED one would take a miracle…literally.

However, one of my Blogger friends {and her crew} are doing an AMAZING giveaway of a Cannon T3 DSLR. Now would this make it any easier or quicker for me to take pictures etc…No. Would I spend less time editing and uploading photos…no. I would actually probably take more time doing that stuff, but I would have a totally cool camera…so it would be cooler 🙂

It’s the Little Things…

It’s the Little Things…

Maybe it’s something in the water, but Small Fox has had a case of the grumps lately. Mr. Fox and I joke that he is a Terrorist and you are scared to be around him. His constant screaming, crying, and whining has pushed every single button I knew I had and he is only 15 months…can’t imagine when Small Fox is Two. Please pray for us all!!!

As I sit here in the quiet house and look at the monitor as he sleeps, I miss him! Despite his screaming, whining, and craziness I miss him. I want to just crawl into his crib and snuggle him all up! It’s all those little things…

His sheer joy while watching me play fetch with our dog Oliver
When he quietly whispers Daddy when I am telling him to say Mama
His love of the shower
His “monster” face
His babbling as if telling me about his day
When he sits down to “read” his favorite book
His open mouthed kisses
His full contact hugs
The way he shoves his blankie between his pacifier and his face just before he sleeps
His giggle and belly laugh
His facination with putting the dog’s food into the dog’s water bowl
The way he loves me…with all is heart

I couldn’t imagine my life without the little booger and I need to remind myself of all these things when the going gets tough!
